Flour Tortillas

Flour tortillas are so simple and quick you’ll wonder why you’ve never made them before. With just a few ingredients you can cook up fresh tortillas while you’re preparing the things that will go in them. We’re going to make 8 roughly 8 inch tortillas.

2 cups flour
1 teaspoon baking powder
1 teaspoon salt
2 tablespoons shortening
1/2 cup warm water

Combine your dry ingredients in a mixing bowl.

Cut in the shortening with a pastry cutter, a fork, or your fingers, until it’s combined. I use my fingers, because my pastry cutter is in storage.

All combined it should look like this.

Add the water a splash at a time, loosely mixing it in. When all of the water has been added, you should be able to form the dough into a ball. If your ball won’t stay together, work in more warm water by the tablespoon, until the ball holds it’s shape. It shouldn’t be sticky, it should be just cohesive enough to not fall apart. Knead this ball 15 times, and then leave it to rest for 15 minutes.

This is how your dough should look when you stretch the ball.

Spicy Honey-Glazed Chicken – It’s Healthy!

The chicken:
4 boneless skinless breasts
1 tablespoon olive oil

The rub:
2 teaspoons garlic powder
2 teaspoons chili powder
2 teaspoons ancho chili powder
1 teaspoon cumin
2 teaspoons salt
1 teaspoon black pepper

The glaze:
1/2 cup honey
2 tablespoons balsamic vinegar

Chop your breasts into 3 or 4 pieces each, lengthwise, giving you roughly evenly sized chicken tenders. Place them into a dish and rub the olive oil all over them.

Combine the rub spices in a bowl. Rub it all over the oiled chicken tenders, coating each piece evenly.

Grill the tenders over medium-high heat for 4-5 minutes per side, or until they’re cooked through.

While they’re grilling, combine the vinegar and honey for the glaze. If the honey is too thick, microwave it for 10 seconds or so.

When the chicken comes off of the grill, brush it on all sides with the honey glaze. Serve a bit of the remaining glaze on the side for dipping, if you’d like, though that makes it less healthy. If you don’t plan to do this, you can easily halve the glaze.

Old Into New

My mother-in-law gave me a gift card to JoAnn, along with a coupon for 40% off an item. I decided it was the perfect opportunity to get some jewelry making supplies.

For years I’ve been collecting odds and ends that I’ve intended to make into necklaces, bracelets, hair clips, and such. Today I went through my jewelry box, and took out everything that had been saved for that purpose. I also took old jewelry that I don’t really wear anymore, so that I may turn that into new things as well.

I’ll need to get some more tools, and I certainly need some wire. Today, though, was a day of cleaning out, organizing, and taking apart. I broke down a lot of pieces into their individual parts, and next week I’ll set to the task of putting things together in new ways.

It’s Mother’s Day!

This bag is for my mother-in-law, Paula. She is hands-down the coolest lady you could ever have as an in-law. She is smart, hilarious, crafty, talented, creative, and her cooking blows mine out of the water.

I consider myself extremely lucky to have Paula as a part of my life.

This bag is for my sister. She’s not a mom, thankfully, she’s only 23. I could hang on to it for 6 weeks until her birthday, but If I see her before then I’ll probably just give it to her.

I’m very impatient, you see, when it comes to gift giving. I don’t think my husband and I have successfully waited for Christmas or a birthday once since we met 8 years ago.
